One of my biggest struggles with menu planning is lunch. We eat lunch at home most days and I often struggle to come up with creative and delicious options. We are usually stuck eating PB&J because I’ve simply run out of more inspiring ideas.
Thankfully, I found a recipe for a Pesto Mozzarella Panini. This sandwich is delicious, quick and easy and will be a new summer staple in our home. It is so tasty, in fact, that I made it more than once this week.
I wish that I could say I made my own pesto but that is one of those skills I have yet to master! I appreciate the convenience of store bought pesto. I love bakery bread and I’m convinced that it makes any sandwich feel more sophisticated. Try an artisan loaf from your grocery store bakery. For this sandwich, I just purchased a round Italian loaf and had the bakery slice it for me. I love trying new flavors of bread with different sandwich ingredients. Changing the type of bread you make your sandwich on is an easy way to spice up your favorite sandwich. You’ll never go back to regular bread again!
To make a yummy sandwich of your own, simply spread pesto on both sides of 2 slices of bread, add slices of tomato and mozzarella (Use fresh mozzarella. I promise you’ll thank me later!) Place in a Panini press or skillet with melted butter. I don’t own a Panini press but feel my grill pan works just as well. And when I don’t want to bother with a grill pan, I just melt ¼ Tbsp of butter in a skillet and brown the sandwiches on each side.
The result is a scrumptious sandwich that rivals any deli or bistro.
