Beans and Sausage

I love easy meals and these beans are the epitome of easy!  It’s been cold and rainy here so we’ve been eating lots of crock pot meals and soups.  You can start these beans in the morning and then you’re house will smell amazing all day as they simmer away on the stove.

You only need 3 ingredients for this recipe.  I told you it’s easy!  Beans, smoked sausage and water.  Simply take 2 pounds of pinto beans and rinse them in a colander. Place them in a large pot with 6 cups of water and let them soak over night.

In the morning, add 2 more cups of water.  Add 2 packages link sausage, sliced into 1/2 inch rounds.  Then cut each round in half and add to the pot.

Sausage

Simmer over low heat, stirring occasionally, for 6 hours or until beans are tender.  Season with salt and pepper.

While these beans are delicious with a side of corn bread, I love them as leftovers.  I can’t wait to share my favorite recipe with the leftovers next week! Hope you have a wonderful weekend full of great food with friends and family!
