Island Pork Tenderloin (93) and Mustard Garlic Green Beans (94)

When Currey and I frist got married, our big dinner splurge would have been a marinated pork tenderloin.  That was our “date night in” dinner and it was a specail treat reserved for when tenderloins went on sale.  Thankfully, our gorvery budget has grown a bit over the years and I’ve realized that there are even better treats than Hormel Terryaki Marinated Tenderloins.  While still not a regular menu item, I’ve found so many great recipes for pork tenderloin over the past few months.  One of those was this Island Pork Tenderloin.  This is a versatile cut of meat and by roasting it in the oven, the meat doesn’t dry out as it can on the grill.

I was intrigued by this recipe on Pinterest because the flavor combination seemed incredibly interesting.  The spice rub created a lovely crust with a very an exotic falvor.  This is a unique dish and worth a try.

I paired this with Mustard green beans. They were so incredibly easy!

Mustard Green Beans

2 cups fresh beans

2 Tbsp olive oil

4 cloves minced garlic

salt and pepper to taste

Combine beans, olive oil and garlic in a skillet. add salt and pepper. Cook over medium heat until tender, 10-15 minutes. Turn off heat and stir in 2 Tbsp dijon mustard and 1/4 cup parmesan cheese.

These were so delcious that we all continued to eat them out of the bowl as we sat around the table talking.  I should have cooked them longer but I still haven’t figured out how to perfectly skillet cook veggies.  The mustard and parmesean was a delcious combination.  In the future I would increase both of them in the recipe.  Not only was this dinner delicious, it was beautiful to look at too!
